The best breakfast I have ever had is served at Dutch Mothers Family Restaurant in Lynden, WA. It is a quaint little restaurant in a quaint little town. I have been there for breakfast twice, it is a bit of a drive from where I live, about 2 1/2 hours, but it has been well worth the travel both trips.If you go, you have to go for breakfast. My favorite entree is a pannekoeken. It is most easily described as a huge platter-sized yet thin pancake with ingredients of your choosing cooked into it. I enjoy one with almonds in the batter and smothered with raspberries and whipped cream. Another delicious recipe cooks bacon and scrambled eggs into the batter. Cover that with syrup and butter and you have yourself a good breakfast.
They also sell delicious desserts that are not to be missed. Both trips I have chased my breakfast down with some dessert.
If you happen to eat there for a lunch or dinner, let me know how it is. I can't ever bring myself to miss breakfast if I'm in the area. But make sure to try a pannekoeken if you go, you won't be disappointed. Mothers truly serves the best breakfast in the Northwest.
